Chocolate Sea Salt Sunbutter Balls (no bake)

One of my favorite combinations is chocolate and sea salt! These no bake balls are a favorite in our house, we always have them in the fridge plus backup in the freezer. They are a great snack to satisfy chocolate cravings but super healthy! I have with my smoothie for breakfast & my son loves them in his lunch. Toddler & husband approved is always an extra win.


Each ball contains good healthy fats, protein, complex carbs, fiber, antioxidants & omega 3s. Perfect for getting more nutrients into our littles. Gluten free & vegan.

 

Ingredients

  • 1/3 cup sunflower butter

  • 1 cup rolled oats (slightly blended)

  • 2 TBSP ground flax seed

  • 2 TBSP cacao

  • 1/4 cup nut milk (add more as needed)

  • 1-2 TBSP maple syrup (per sweetness preference)

  • Flakey or coarse sea salt to taste

Method

  1. Quickly blend or pulse oats for a course chop, don’t turn it into flour.

  2. In a bowl mix dry ingredients

  3. Add sunbutter & maple syrup

  4. Slowly add nut milk as you stir, add more as needed, just enough to bring ingredients together. You don’t want the batter to be too wet or sticky. If that happens, add a touch more oats.

  5. Roll into balls. Makes 12-15

  6. Keep them plain or roll in fine coconut flakes.

  7. Store in an airtight container in the refrigerator. These will keep for at least a week. You can also keep them in the freezer & let thaw for a couple minutes before eating.

    I typically make a double batch and store half in the fridge and half in the freezer, we go through them fast, they are that good!
