Chocolate Chia Pudding

This is the most velvety chocolate pudding! This reminds me of the chocolate pudding my Mom used to make us as kids but this is a super healthy plant based version with no artificial ingredients. This pudding is high in Omega 3s, antioxidants, fiber & protein. My toddler and husband love this recipe, so it’s a treat the whole family can enjoy. Gluten free, dairy free, vegan & can be made nut free.

 

Ingredients

  • 2 cups unsweetened vanilla almond milk (sub any plant based milk)

  • 1/2 cup chia seeds

  • 1/4 cup cacao powder

  • 2 to 3 TBSP maple syrup (adjust to sweetness preference)

  • 2 tsp vanilla extract

 

Method

  1. Blend all ingredients in a high speed blender until chia seeds completely dissolve. The pudding will quickly start to congeal and become the consistency of mousse.

  2. Add pudding to one large air tight container or individual ramekins & chill in the refrigerator for a few hours.

  3. The pudding will keep in the fridge for 3 days.

  4. When serving, eat plain or add your favorite topping like coconut flakes, cacao nibs, nuts, nut butter or berries.
