Carrot Cake Smoothie

Ingredients

  • 1 cup peeled & chopped fresh carrot

  • 1/2 frozen banana

  • 2 scoops vanilla protein powder (links below)

  • 3/4 to 1 cup unsweetened coconut milk (or any non dairy milk)

  • 1 TBSP almond butter

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger or 1 inch piece of fresh

Method

  1. If you have a high speed blender like a Vitamix, then you can throw the carrot in raw, it will quickly whip the carrot into a puree. But if you are usually a regular blender or Nutribullet, you may need to steam the carrot first because it won’t get as creamy and you don’t want a chunky smoothie.

  2. Add all ingredients to the blender. Add more liquid for desired consistency. Enjoy!
