Edible Snickerdoodle Cookie Dough Bites (no bake)

Safe to eat cookie dough with a healthy twist! These truly taste like raw cookie dough, you’ll never believe they are healthy and made with chickpeas! (I promise you can’t even taste them). I absolutely LOVE cinnamon so these decadent little bites check all the boxes for me. The best part is, this recipe is so easy to make, no baking required!

Ingredients

  • 1 15 ounce can chickpeas (drained & rinsed)

  • 3/4 cup oat flour

  • 1/3 cup sunflower seed butter (or any nut/seed butter)

  • 1/4 cup maple syrup

  • 4 tsp vanilla extract

  • 1.5 tsp cinnamon

  • 1/2 tsp salt

Optional topping:

  • 1 TBSP coconut sugar (or cane)

  • 1/4 tsp cinnamon

 

Method

  1. Drain & rinse chickpeas.

  2. Blend oats in high speed blender to make into flour.

  3. Add all ingredients to food processor, blend until combined.

  4. Roll into bite size balls

  5. Optional step: For a more decadent treat (adds higher sugar content) roll the balls in sugar/cinnamon topping mixture listed above. But honestly, they are just as good without it!

  6. Put in an air tight container but give them space from each other, otherwise they will stick together.

  7. Store in the refrigerator for up to 1 week. They will also freeze well. If storing in the freezer, when ready to eat, take out for a couple minutes to let thaw or warm in the microwave for 10 seconds. I usually store half in the fridge and half in the freezer.

Notes:

  • You can use any nut or seed butter, just make sure it is creamy with any added oils, sugar or salt.

  • Coconut flour or fine almond flour would work instead of oat flour.
