Pesto Spinach & Pea Salad

Best salad EVER! I always take this salad to dinner parties and it’s always a major hit!

You can use fresh homemade pesto or store bought. See my other recipes for my Cashew Pesto or Pumpkin Seed Pesto. I’ve also used Trader Joe’s Kale Pesto for this salad & it was great, you will use the whole container.

 

Ingredients

  • Pesto

  • 1 large box of spinach (I use most of it when making a big batch)

  • 1 small bag of frozen peas (don’t cook, just place in a colander & rinse with warm water to thaw)

  • Vegan or regular parmesan cheese (I love Vio Life Foods)

  • Toasted pine nuts (buy raw and roast in a pan or oven - stay close as they burn quickly!)

  • salt & pepper to taste

 

Method

  1. Gently toss the spinach, peas & pesto (generous amounts of pesto) - make sure you don’t end up with big clumps of pesto, it takes a bit of massaging so you keep the spinach in tact.

  2. Add parmesan, roasted pine nuts, salt & pepper

*Pine nuts are optional but definitely take the salad to the next level. I always add the pine nuts when taking this salad to a dinner party.

*The pesto will wilt the spinach fairly quickly, so wait to toss ingredients together until right before serving. Even though it wilts, it will still taste delish the next day (IF there is any left over).
