Edible Chocolate Chip Cookie Dough Balls (no bake)

These are INSANELY good! They truly taste like raw cookie dough, you’ll never believe they are healthy and made with chickpeas! (I promise you can’t even taste them). These are sure to be a hit with the whole family. I made them with sunflower butter so they would be safe for school but you could sub any creamy nut butter for this recipe. The best part is, this recipe is so easy to make, no baking required! Gluten free & vegan.

 

Ingredients

  • 1- 15 ounce can chickpeas (drained & rinsed)

  • 3/4 cup rolled oats OR store bought oat flour

  • 1/3 cup sunflower seed butter (or any creamy nut butter)

  • 1/4 cup maple syrup

  • 4 tsp vanilla extract

  • 1/2 tsp salt

  • 1/4 to 1/3 cup chocolate chips

 

Method

  1. Drain & rinse chickpeas.

  2. Blend oats in high speed blender to make into flour.

  3. Put all ingredients (except chocolate chips) into food processor, blend until combined.

  4. Transfer dough to a bowl (it will be very sticky).

  5. Mix in chocolate chips.

  6. Roll into balls.

  7. They will stick together, so put in an air tight container but give them space from each other.

  8. Store in the refrigerator for up to 1 week. They will also freeze well. If storing in the freezer, when ready to eat, take out for a couple minutes to let thaw before eating or warm in the microwave for 10 seconds.

Notes:

  • You can use any nut or seed butter, just make sure it is creamy.

  • Coconut flour or fine almond flour would work instead of oat flour.

  • I use Sunbutter Organic Sunflower Butter, Enjoy Life Chocolate Chips & Terra Soul Rolled Oats.
