Vanilla Mint Chocolate Chip Smoothie

This smoothie is such a treat and one of my FAVORITES! This could be breakfast OR dessert, you need to try this one!

 

Ingredients

  • 1 frozen banana

  • 2 large fresh mint leaves (or 6-8 small leaves)

  • 2 scoops Nuzest vanilla vegan protein powder (use my code laurenvasquez for 15% off!)

  • 1 cup unsweetened vanilla plant based milk

  • 1/2 tsp vanilla extract

  • 1 TBSP cacao nibs

  • 1 cup ice cubes

 

Method

  1. Add all ingredients to blender (except cacao nibs). Blend on low and slowly turn up to high. Pause and scrape down sides of blender as needed. If necessary add more milk until desired creamy texture is achieved. Less liquid results in a thicker smoothie, add more liquid for a more sip-able version.

  2. Add cacao nibs. Blend on pulse on low briefly. Avoid over blending so you keep some of the texture of the “chips” in tact.

  3. Add extra cacao nibs on top for extra crunch & enjoy!

 

Notes

  • Mint can get really over powering, so you can always add more but not take it out. Add a couple leaves, test & add more if desired. Peppermint extract could also work

  • For more veggies, add spinach (it will just turn the smoothie green)

  • Sub cacao nibs with chocolate chips.

  • Any plant based milk works, use your favorite. (I used unsweetened vanilla Milkadamia)

  • Use your favorite vanilla protein powder. I’ve made this using Truvani, Nuzest & Equi.life - all were delicious!
