Cold Brew Coffee Smoothie

This smoothie is such a treat and one of my FAVORITES! This could be breakfast OR dessert, you need to try this one!

 

Ingredients

  • 1 frozen banana

  • 1/2 cup frozen raw cauliflower rice

  • 1/2 cup Drink Nitro cold brew

  • 2 scoops vanilla protein powder

  • 1/4 cup unsweetened coconut milk (or non-dairy milk of choice)

  • 1 TBSP sunbutter (or any nut/seed butter)

  • 1/4 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 1 cup ice

 

Method

  1. I used Drink Nitro cold brew from a can, you could sub any other cold brew or home brewed coffee. If you use coffee from home, just make sure to put in the fridge to chill prior to preparing smoothie.

  2. I made this smoothie in my food processor and it whipped it into a super creamy ice cream consistency! But you can use any blender.

  3. Add all ingredients to the food processor or blender. Add more liquid if needed. Enjoy!

 

Notes

  • Mint can get really over powering, so you can always add more but not take it out. Add a couple leaves, test & add more if desired. Peppermint extract could also work

  • For more veggies, add spinach (it will just turn the smoothie green)

  • Sub cacao nibs with chocolate chips.

  • Any plant based milk works, use your favorite. (I used unsweetened vanilla Milkadamia)

  • Use your favorite vanilla protein powder. I’ve made this using Truvani, Nuzest & Equi.life - all were delicious!
